For those who have never heard of lechon – it is basically a suckling pig roasted over charcoal. It is delicious, but no one can agree on who makes the best. We can only agree that the best lechon comes from Cebu, Philippines. The reason why people have difficulty agreeing is because there’s so much good lechon to choose from. For a classic lechon taste, there’s no better than Cang’s Lechon. Unlike many of the places listed here, these lechons are made to order, which means they don’t make too many lechons a day, ensuring high quality. Whenever I taste a lechon from Cang’s, I always know that the skin crunch is going to be perfect while the meat would have just the right flavor.

What started out as a small stall specializing only in boneless lechon served in the middle of a parking lot has blossomed into a full-fledged carenderia type eatery. Known for their boneless lechon, their popularity has allowed them to blossom and serve all sorts of other dishes and has even allowed them to expand in Manila.

I still remember the first time I cut the spicy lechon from Rico’s. You can literally see the spices oozing out as you cut the skin. Known for their spicy lechon, Rico’s deserves a spot in any list of Cebu lechon. Having risen to popularity thanks to the recommendation of President Estrada, this is a favorite among many. .

Recommended by no other than Anthony Bourdain, they live up to his moniker, “The best pig ever.” In a sense, this isn’t your typical Cebu lechon. There’s something about the way they prepare them that makes it different, but still carry the distinct Cebu flavor. A favorite choice for pasalubongs because of their branches in or near the airport.

Carcar Lechon

The famed Carcar lechon is not easy to find for the typical foodie. Out of every recommendation posted on this list, this is the one where you have to literally drive an hour away from the city, enter the Carcar Public Market, haggle with the vendor, and then finally you have the pig. This is a favorite among those taking roadtrips down south. Part of the allure is the entire experience of actually going there and buying one.
